Steps

Step 1 :

Wash and soak the rice in water as instructed on the packet of the basmati rice. Dry the rice on a muslin cloth in shade and grind it into a coarse powder and keep it aside.

Step 2 :

Simultaneously boil the milk and keep stirring till its reduced a little and then add the coarse rice powder and keep stirring it continuously and see to it that no lumps are formed and cook till the rice is completely cooked.

Step 3 :

Then add sugar, condensed milk and keep stirring continuously till the sugar gets completely dissolved. Just before switching of the flame add saffron soaked in milk, cardamom powder and vanilla essence and mix well and switch of the flame.

Step 4 :

Then pour the phirni into earthen pots and garnish with dry fruits, edible silver leaf. Refrigerate and enjoy the phirni after few hours.
