Cooking Steps for Ek Dum Chicken

Step 1 : For Marination

Make a fine paste of the onion, garlic and tomato. Marinate the chicken with everything except the peppercorn, whole red chilli and the bay leaf. You can avoid the sugar here as well. The marination time is approximately 2.5 hours.

Step 2 :

Heat oil in a thick pan, temper the peppercorn, bay leaf and red chilli. Once the flavor starts emanating, add the chicken with the marinade.

Step 3 :

Stir well and cover the pan with a lid. Lower the flame and slow cook. Occasionally stir. This should take about half an hour to get ready.

Step 4 :

Check for the salt and sugar. Modify as per taste. Heat some ghee on a spoon and add a pinch of garam masala to it. Pour this over the gravy and allow a standing time of 10 minutes.
