Classic bhindi (okra) curry with a Keralite coconutty twist.

Cooking Steps for Vendakkai Curry

Step 1 :

Deep fry the Vendakkai/ladius finger in oil till it begins to turn golden brown. Drain and keep aside.

Step 2 :

Heat the oil in a karahi, add onion, ginger, garlic and curry leaves and saute till onions are soft and transparent.

Step 3 :

Add sliced tomatoes, salt to taste, red chili powder and turmeric powder and fry for another 5 minutes or till tomatoes are soft.

Step 4 :

Mix MAGGI Coconut Milk Powder in 2 cups of warm water and add to the above masala. Bring to a boil and add fried vendakkai. Cover and cook for another 5 minutes.

Step 5 :

Serve hot.
