Method
Step 1 : Divide the batter
Split the fermented idli batter into three bowls. Mix purple cabbage puree in one, a pinch of turmeric in another, and beetroot puree in the third to create purple, yellow, and pink batters.
Step 2 : Prepare the moulds
Grease the idli moulds or small glasses with a little oil. Place an ice-cream stick in the centre if using.
Step 3 : Layer the batter
Pour the colored batters carefully into the moulds to create distinct layers: First layer: Pink batter. Second layer: Yellow batter. Third layer: Purple batter. Pour each layer slowly and gently so the colours remain separate and visually appealing.
Step 4 : Steam the idlis
Place the moulds in a preheated steamer and steam for 10–12 minutes, or until the idlis are cooked through. Allow them to cool slightly before removing from the moulds to maintain their shape.
Step 5 : Prepare the coconut chutney
Grind grated coconut, roasted chana dal, green chilli, salt, and water into a smooth chutney. Adjust water to reach the desired consistency
Step 6 : Prepare the green chutney
Blend coriander leaves, mint leaves, green chilli, lemon juice, salt, and a little water until smooth.
Step 7 : Optional tempering
Heat oil in a small pan, add mustard seeds and curry leaves, and let them splutter. Pour this tempering over either chutney for extra flavour.
Step 8 : Serving
Serve the soft, colourful tri-colour ice cream-shaped idlis hot with coconut chutney, green chutney, and podi masala for a vibrant and wholesome dish.
