Pineapple Boat Fried Rice

Pineapple Boat Fried Rice is a bright and fresh, visually-appealing, delightful one-pot meal, known for its balance of spicy, sweet, and tangy flavours. Served in a carved pineapple shell, it’s both eye-catching and nutritious.

Method:

Step 1 :

Prepare the Pineapple Boat. Slice a pineapple in half lengthwise, keeping the crown (leafy head) intact. Using a spoon and knife, scoop out the flesh without piercing the skin of the pineapple shell. Chop the scooped flesh, setting aside 1 cup for the rice. Reserve the shell for serving.

Step 2 :

Cook the Fried Rice Base. Heat 2 tablespoon oil in a deep pan or wok. Add ginger, garlic, and green chilli, sauté for 30 seconds. Add chopped onion, cook until translucent and slightly brown. Add the mixed veggies and sauté for 2–3 minutes. Finally, add the chickpeas. Remove in a bowl.

Step 3 :

Add Pineapple and Sauces. Add chopped pineapple to the same wok or pan. Stir for 1 minute. Add soy sauce, vinegar, ketchup, chilli sauce, sugar, salt, pepper, and lemon juice. Mix well and cook for 1–2 minutes to let the flavours blend.

Step 4 :

Mix in Rice (and protein if using). Add the cooked rice and stir gently to coat evenly. Add your optional protein (paneer/chicken/prawns) and mix. Cook for another 2 minutes on low flame to heat everything through. Taste and adjust salt, spice, or lemon.

Step 5 :

Serve in Pineapple Boat. Spoon the fried rice into the hollow pineapple shell. Garnish with peanuts and anaar. You can also add finely chopped fresh coriander and mint for an extra kick. Serve hot with tangy mango raita, sweet chilli sauce, or Thai crunchy cold cucumber salad.

Customisation options:

Step 1 :

Jain version: Skip onion, garlic. Add grated raw mango or more lemon.

Step 2 :

Vegan version: Use tofu instead of paneer.

Step 3 :

Extra protein option: Add sautéed chicken sausages, cut in small cubes - a hit for parties or with kids!

Step 4 :

Mild for kids: Skip green chilli and chilli sauce. Add sweet corn or cashews.

Step 5 :

Add crunch: Garnish with fried onions or roasted sesame seeds.
