Ashoka Halwa

Cooking Steps

Ashoka Halwa

Step 1 :

In a pressure cooker, heat 1 tsp of ghee and roast ½ cup of moong dal.

Step 2 :

Add 2 cups of water and mix well.

Step 3 :

Cover and pressure cook for 3 whistles or until the dal is well cooked.

Step 4 :

Allow the dal to cool completely, then blend it into a smooth paste and set aside.

Step 5 :

In a large kadai, heat ¼ cup of ghee and roast 2 tbsp of wheat flour until it turns aromatic and lump-free.

Step 6 :

Add the prepared moong dal paste. Stir and cook, ensuring the dal paste is well combined.

Step 7 :

Cook for 5 minutes or until the mixture begins to thicken slightly.

Step 8 :

Add ¾ cup of sugar and mix well.

Step 9 :

Keeping the flame on medium, dissolve the sugar and continue cooking for 15 minutes or until the mixture turns glossy.

Step 10 :

Soak a pinch of saffron threads in warm milk, add food colour (optional), and mix well. Add this to the halwa.

Step 11 :

Keep cooking on a low flame until the mixture starts to leave the sides of the pan (this takes approximately 25 minutes).

Step 12 :

In a separate pan, heat 1 tbsp of ghee and roast 2 tbsp of cashews and 2 tbsp of raisins until the nuts turn golden brown.

Step 13 :

Add the roasted nuts to the halwa along with ¼ tsp of cardamom powder.

Step 14 :

Mix well and serve warm.
