Chakka Kumbilappam
Step 1 :
Clean the banana leaf or bay leaves under running water and pat them dry.
Step 2 :
Heat ghee in a heavy-bottomed pan. Deseed the peeled jackfruit and grind it in a mixer jar.
Step 3 :
Add the ground jackfruit to the ghee, stir well, and cook for about 5 minutes.
Step 4 :
Melt the jaggery in hot water, strain it, and add it to the jackfruit mixture. Mix well.
Step 5 :
Roast the rice flour in another pan until aromatic. Add the roasted flour to the jackfruit-jaggery mixture.
Step 6 :
Cook on a low flame, stirring continuously, until the mixture reaches a dough-like consistency and starts leaving the sides of the pan. Turn off the flame and cover the mixture for 10 minutes to let it cool slightly.
Step 7 :
Once warm, shape small portions of the mixture into cones. Wrap each cone in a banana leaf or bay leaf, folding one end to seal it. Secure with a toothpick, if needed.
Step 8 :
Heat an idli steamer, place the wrapped cones inside, and steam for about 20 minutes. Check doneness by inserting a toothpick—it should come out clean.
Step 9 :
Serve warm.
