Nei Podi Koxhi Varuval or Dry Chicken Ghee Roast ( inspired by Chef Madhampatty Rangaraj Sir), is a South Indian style chicken roast where chicken is cooked with spices and later roasted to perfection until aromatic and delicious.

Cooking Steps

Procedure:

Step 1 :

Heat the kadai and fry the marinated chicken cubes.

Step 2 :

Heat the pan and pour gingerly oil, fennel seeds, chopped shallots and chopped tomatoes. Saute it well until brown.

Step 3 :

Add the fried chicken pieces and mix it well.

Step 4 :

Add chopped green chillies and add the fresh curry leaves.

Step 5 :

Add ghee and add idly podi and mix it.

Step 6 :

Now, the “Nei Podi Kozhi Varuval” is ready.
