Prepare the Dough (Modak Wrap):
Step 1 :
On a plate, mix maida, salt, and chilled butter.
Step 2 :
Rub the butter into the flour until it resembles bread crumbs.
Step 3 :
Add chilled water and knead into a stiff dough.
Step 4 :
Let the dough rest for 20 minutes.
Prepare the Stuffing:
Step 1 :
Heat butter in a pan.
Step 2 :
Add soya granules, green peas, tomato puree, turmeric, and pav bhaji masala.
Step 3 :
Cook on a slow flame for 3-4 minutes until moisture evaporates.
Step 4 :
Stir in garam masala, lemon juice, and coriander leaves.
Step 5 :
Season with salt and let the mixture cool.
Shape and Fry:
Step 1 :
Flatten a lemon-sized portion of dough with greased fingertips.
Step 2 :
Place a teaspoon of the stuffing in the centre and cover it with the dough.
Step 3 :
Shape into a modak by hand or using a mould.
Step 4 :
Fry the modaks until golden brown.
Step 5 :
Serve hot with a yoghurt and mayo dip.
