Ghee Podi Idli

Elevate the humble idli with a delicious podi and a generous drizzle of fragrant organic ghee for a South Indian breakfast delight.

Cooking Steps

Step 1 :

In a blending jar add the soaked urad dal and rice and blend it to form a smooth batter. Adjust the consistency of the batter using water. Now keep this batter overnight or 8-10 hours for fermentation.

Step 2 :

Once the batter has fermented, add salt to the batter and pour in greased idli moulds and steam in an idli steamer for 10-15 minutes to get soft and fluffy idlis.

Step 3 :

To prepare the podi, place a pan on low flame add the chana dal and urad dal and roast them until they turn light brown and fragrant. Now add the sesame seeds, jeera and red chillies as well.

Step 4 :

After roasting and cooling, add the contents into a dry blending jar, add some salt and hing and blend to form a slightly coarse powder, this is your milagai podi ready.

Step 5 :

To serve, place 2 idlis on a serving plate, and sprinkle a generous amount of the prepared podi. Finally, top it with a generous drizzle of the delicious organic ghee. And serve hot.
