It's a quick and delightful monsoon treat, perfect for savouring the rainy days.

Zucchini Cheese Fritters

Step 1 :

In a mixing bowl, add the grated zucchini, add the grated cheese and mix well. Add some salt and let it rest for a minute.

Step 2 :

Drain out the excess water from the zucchini, now crack an egg into the mixture, and whisk everything well.

Step 3 :

Add the seasonings, and finally add the besan. Add just enough to get a cake-like batter.

Step 4 :

On a flat pan, drizzle some olive oil and place it on medium heat. Take a spoonful of the prepared batter place it on the pan, and flatten it slightly.

Step 5 :

Add more fritters to the pan, flip and cook on either until it is crispy on both sides.

Step 6 :

Enjoy hot with a dip of choice.
