Vanilla Matcha Pannacotta with Spiced Orange Sauce

Panna cotta, which translates to “cooked cream” in Italian, is a no-bake dessert of sweetened cream that’s set with gelatin( I have used agar agar). The Spiced Orange Sauce recipe adds that tangy fruity flavor to the dessert. The addition of matcha powder in this version also adds a dash of antioxidant power to the dessert. Cooking Steps

For Spiced Orange Sauce

Step 1 :

Melt the butter in a saucepan.

Step 2 :

Add the sugar and orange juice to it along with the crushed spices. Keep mixing and let it simmer for a few minutes covered to infuse the flavor of the spices.

Step 3 :

Add the cornstarch mixed with a little water to the sauce along with the orange rind let it come to a boil and thicken a little. The sauce should have a pouring consistency. Switch off flame add the orange slices and cool down.

For Vanilla Pannacotta

Step 1 :

Very lightly grease the moulds you’ll be using for your pannacotta.

Step 2 :

Combine all the ingredients except for the vanilla and salt in a medium/large pot. Whisk to combine, then place on the smallest hob/burner over medium heat.

Step 3 :

Stir intermittently and continue to cook your cream mixture. You want it to reach a boiling point (vigorous small bubbles on the surface) without burning the mixture or heating it too quickly.

Step 4 :

If the mixture has not reached this point after 10 minutes, turn the heat up a little.

Step 5 :

Once the mixture reaches this point, keep it there for another minute or two.

Step 6 :

Add the vanilla and salt and stir to combine.

Step 7 :

Remove the mixture from the heat and carefully decant it into a pouring jug. You can pass it through a sieve if any milk skins have formed.

Step 8 :

Pour the mixture into your prepared moulds and allow them to cool for 10 minutes before transferring them to the fridge, allow 2-4 hours to cool and set.

For Matcha Pannacotta

Step 1 :

Premix the coconut powder in coconut water in a bowl. In a medium saucepan over medium-low heat, combine the coconut mixture, sugar, and matcha powder. Warm slowly, stirring occasionally, until the sugar is dissolved and the mixture is simmering.

Step 2 :

Add the agar agar to hot water and stir until there are no lumps and the agar agar is fully dissolved.

Step 3 :

Pour the agar mixture into the warm coconut milk and whisk to combine. Increase the heat to medium, bring to a gentle boil, and whisk continuously for 3 minutes, until thickened. Remove from the heat and immediately pour on top of the vanilla pannacotta.

Step 4 :

Place back the mould in fridge and allow to refrigerate for 3-4 hrs.

For Serving

Step 1 :

When ready to serve, use an offset spatula or butter knife to carefully work around the edges of the ramekins to loosen the panna cotta. Invert onto serving plates and pour spiced orange sauce to garnish.
