Litchi Curry

A unique and flavourful vegetarian dish that combines the sweetness of Litchi with traditional Indian spices.

Cooking Steps

Litchi Curry

Step 1 :

Take a medium-sized kadhai, and place it on medium heat. Heat the oil, and add the cumin seeds.

Step 2 :

Once the cumin seeds splutter, add the chopped onions and cook them till they are translucent. Now add the tomatoes and add the desired amount of salt. Cook until the tomatoes are soft and mushy.

Step 3 :

Now add the green chilli ginger paste and cook until the raw smell wears off, now add the turmeric powder and cook for about a minute.

Step 4 :

Now add the fresh lychee and mix it well. Add 1-1.5 cups of water and bring everything to a boil. Cook covered for about 10 minutes.

Step 5 :

Add garam masala and cook for another minute.

Step 6 :

Finally, turn off the flame, add the lemon juice and fresh coriander and serve hot with rice or roti.
