Dabeli literally means "pressed" in Gujarati language. The dish is said to have been created by Keshavji Gabha Chudasama (also known as Kesha Malam), a resident of Mandvi, Kutch, in the 1960s. When he started business he sold dabeli at the price of one anna or six paisa.

Cooking Steps
For the Chilli Garlic Chutney
Step 1 :
To make garlic chutney: In a small grinder, add the soaked red chillies, chopped garlic cloves and lemon juice and blend to a smooth paste.
For the Potato Filling
Step 1 :
Heat oil. Add cumin seeds. Add chopped onions. Sauté the onions till soft. Add 1 pinch of asafoetida (hing) and fry for a few seconds on low heat.
Step 2 :
Add tamarind chutney to the onions and mix well. Add the mashed potatoes, and salt and mix well. Cook the potato mixture for 2 minutes, stirring.
For Serving Dabeli
Step 1 :
Slice the pavs into two. In a skillet, melt some butter. Lightly roast the pavs on it.
Step 2 :
Apply a layer of tamarind chutney on one half of the pav and the prepared red chilli garlic chutney on the other half.
Step 3 :
Take a portion of the prepared potato filling and put it on top of one half. Top it with some Tasties peanuts, coconut and Tasties bhujiya sev. Cover with the other half.
