Vegetable Stew – Mixed Vegetable

Step 1 :

Heat 2 tbsps coconut oil in a pan, add 1 inch cinnamon stick, 2 star anise, 6 - 8 black peppercorns, 3 cloves, 6- 8 curry leaves, 2 - 3 green chillies & sauté till fragrant.

Step 2 :

Add 1 large sliced onion, and 1 tbsps ginger-garlic paste & sauté till translucent.

Step 3 :

Add 400 gms mixed vegetables, salt & crushed black peppercorns to taste, mix well & cook for 2 minutes Add 1½ cups coconut milk & mix well. Cook for 5 -7 minutes.

Step 4 :

Serve hot, garnished with coriander springs.
