This traditional Bengali recipe is prepared using a mustard paste, adding a distinct and authentic flavour to the dish. Its age-old preparation method brings out the rich cultural heritage of the region.

Sorshe Begun

Step 1 :

Cut Brinjal into thin and long slices of 2 to 3 inches each piece.

Step 2 :

Fry them to a golden brown.

Step 3 :

Take the fried Brinjal pieces off the oil and add the dry chilli and some turmeric powder to the same oil. Keep the flame low. Let it cook for 1 min.

Step 4 :

Add 3/4th glass of water.

Step 5 :

Increase the flame and bring it to a boil.

Step 6 :

Once it starts boiling lower the flame and add the mustard paste.

Step 7 :

Mix it well and let it cook for 4 to 5 mins on low flame.

Step 8 :

Add the fried brinjal pieces.

Step 9 :

Cover and cook for 5 more mins on medium to low flame.

Step 10 :

Add 1 teaspoon mustard oil on top and 2 green chillis (spotted).

Step 11 :

Off the flame. Serve with hot steamed rice.
