Shoyu Ramen

Whether it's date night or a midnight snack, ramen always satisfies. How about taking this comforting dish to the next level and making the noodles yourself? You'd be surprised how easy it is!

Cooking Steps

For Noodles:

Step 1 :

Set aside 1 tablespoon of room-temperature water for future use. Mix the rest of the water with salt. Add the salted water to the flour and combine until rough strands are formed.

Step 2 :

Knead dough into a rough ball. Sprinkle more water if any dry flour remains, but do not add too much water.

Step 3 :

Cover the dough and rest for 20 minutes. Combine the baking soda with the reserved water and dissolve completely. Add this water to the dough and knead again until smooth.

Step 4 :

Flatten the dough into a rectangular shape. Apply the oil to both sides of the dough. Cover and rest for 2 hours.

Step 5 :

While the dough is resting, prepare your toppings. Boil the eggs for 6-7 minutes for a jammy yolk, and 8-10 minutes for a hard-boiled egg. Plunge in cool water and remove the shell. Thinly slice the spring onion.

Step 6 :

Clean and cut the mushroom into thick slices. Heat oil in a pan and saute the mushroom until golden brown. Season with salt and pepper to taste.

Step 7 :

For the soup, heat the water in a pot and add the Maggi magic cube. Allow the soup to boil, then simmer for 5 minutes.

Step 8 :

Turn off the heat and add the soy sauce. If using ginger, wash and grate it, then mix it into the warm soup.

Step 9 :

Bring a pot of water to boil. Once the noodle dough has rested, use a sharp knife to cut thick noodles.

Step 10 :

Stretch the noodles by gently pulling, either individually or 5 strands together, but ensure they do not join when stretching.

Step 11 :

Boil the noodles in hot water for 2-3 minutes, checking the doneness of the noodles. Use a strainer to remove excess water from the noodles once cooked.

Step 12 :

To assemble your ramen bowl, place a heap of noodles in your bowl, gently ladle the soup onto the noodles until just covered, then top it with mushroom, spring onion, and a halved boiled egg. Feel free to add any toppings of your choice!
