For Malabari Parota Wrap

Step 1 :

Cook iD fresho Malabar parotta by applying ghee on a pan.

Step 2 : For Malabar parotta nachos:

Cut the cooked paratha into triangles, brush ghee and sprinkle Malabar black pepper powder and then air fry at 200 degrees for 5 minutes.

Step 3 :

Stir fry all the veggies - capsicum, onion, tomato, curry leaves, coriander leaves & green chilli with a spoon of oil with salt, Malabar pepper, cumin powder and coriander powder.

Step 4 : For Malabar spinach & coconut sauce (Basale chutney) :

Blend together coconut, Malabar spinach (basale), green chilli, garlic, jaggery, and tamarind to create a smooth paste. In a pan, heat oil and temper it with cumin seeds, mustard seeds, curry leaves, and dried red chilli. Add the prepared sauce paste to the tempering and cook for 2 minutes, allowing the flavours to meld together.

Step 5 : Malabari tikki (Poricha pathiri) :

Combine iD fresho idli dosa batter, spinach, onion, black pepper, cumin-coriander powder, garam masala, curry leaves, shredded coconut, salt, green chilli, corn flour, and bread crumbs in a glass bowl. Mix everything thoroughly until a firm dough is formed and shape the dough into round flat patties. Brush them with oil and air fry at 200 degrees Celsius for 15 minutes, until golden and crispy.

Step 6 :

Cut the paratha from the centre to create a triangle shape for the wrap. Spread a layer of mayonnaise on one-quarter of the paratha. Place the prepared tikki on top of the mayonnaise.

Step 7 :

Spread a generous amount of Spinach coconut sauce on another quarter of the paratha. In the third quarter, place a delectable mix of stir-fried veggies. Sprinkle grated cheese and top it off with the flavorful Malabar nachos on the remaining quarter.

Step 8 :

Fold the wrap and air fry at 200 degrees for 4 minutes. Serve hot.
