Kadhi Rice

A healthy, comfort food, Kadhi rice is made with fried fritters and yogurt-based curry. It is served with piping hot rice.

Kadhi Rice

Step 1 :

Take curd, 3 tbspn besan, 2 tspn salt, 1 tspn red chilli powder, 2 tspn dhaniya powder, 1 tspn turmeric powder, 1 tbspn amchur powder, 1 tspn chaat masala and water. Mix well with a hand blender and make a fine paste.

Step 2 :

In a cooker add ghee and hing, mustard seeds and methi seeds. Once they begin to splutter add curry leaves and add the prepared mixture.

Step 3 :

Add 3-4 glasses of water and mix thoroughly.

Step 4 :

In a kadhai add oil for frying and let it heat.

Step 5 :

Add 1 glass of rice in a bowl and soak it in water for about 30 mins.

Step 6 :

In another bowl, take 2 tbspn of besan and all other pakora ingredients, mix well and make a thick batter.

Step 7 :

Now make small pakoras and deep fry them until crisp

Step 8 :

Meanwhile keep water for boiling rice in a big vessel.

Step 9 :

After 2-3 boils in kadhi, add the pakoras to it and mix well. Let it cook for another 10 mins.

Step 10 :

After 10 mins, switch off the flame and take a small pan.

Step 11 :

In a small pan add 1 tspn ghee, dried red chillies, green chillies and 1/4th tspn kashmiri red chilli powder for tadka. Once done, garnish kadhi with this chaunk.

Step 12 :

To cook rice, wash it thoroughly and add rice in boiling water. Let it cook and then strain it.

Step 13 :

Serve hot and enjoy.
