Jhinge Dudh Shukto

A light summer curry made with ridge gourd and bitter gourd simmered in milk and other spices.

Jhinge Dudh Shukto

Step 1 :

Smear the karela slices with a little salt. Keep aside for 10 odd minutes, then rinse and pat dry. Cut the jhinge into pieces and make a smooth paste in a mixer.

Step 2 :

Coarsely grind 1 tsp celery seeds in a mortar and pestle, and keep aside.

Step 3 :

Heat 2 tbsp oil, and fry the boris till golden brown. Keep aside on a kitchen absorbent towel.

Step 4 :

Add the bitter gourd to the same oil, and sauté till light brown. Keep aside on a kitchen absorbent towel.

Step 5 :

Add the remaining oil to the pan, and throw in the mustard seeds and 1 tsp celery seeds. Allow the spices to splutter.

Step 6 :

Now add the jhinge paste and a sprinkle of salt, and sauté for 4-5 minutes. Cook over a moderate flame till the water released by the ridge gourd has almost dried up.

Step 7 :

Add 1 tbsp ginger paste and poppy seed paste and cook for another 2-3 minutes.

Step 8 :

Add sugar, ground celery seeds, the fried karela slices, boris. Pour 1/2 cup of milk. Continue to cook for another 5 minutes till the jhinge and karela are perfectly cooked.

Step 9 :

Step 10 :

Add a generous dollop of ghee, sprinkle grated coconut and some crushed boris on top. Serve with rice.
