An egg-based snacks that takes oats to a whole new level.

Oatmeal Cookies

Step 1 :

Separate the eggs, putting the whites into a bowl to whip up later.

Step 2 :

Combine the sugar, oats, egg yolks, vanilla, peels, melted butter and baking powder in a bowl, making sure all the lumps formed with the oats and sugar are broken up well.

Step 3 :

Beat the egg whites with the salt to create stiff peaks.

Step 4 :

Mix in the whites into the cookie mixture.

Step 5 :

Drop spoonfuls onto a greased baking sheet and bake in a 180 degrees preheated oven for 10 minutes or until golden brown and slightly darker around the edges.

Step 6 :

Allow the cookies to cool on a wire rack before removing and storing in an airtight tin.
