Traditional Burnt Cheese dessert from Odisha “Chhena Poda” flavoured with paan!

Cooking Steps

Paan Chhena Poda

Step 1 :

Soak fennel seeds in water for 1 hour.

Step 2 :

To prepare batter, in a mixing bowl crumble & mash cheese cube, cottage cheese & cream cheese together so that the texture is uniform.

Step 3 :

To the cheese mixture, add sugar & semolina then give it a nice mix.

Step 4 :

Prepare paan mixture by smoothly grinding paan leaves, gulkand, soaked fennel seeds & 4 tbsp water.

Step 5 :

To the cheese mixture add ghee, crushed cardamom, chopped dry fruits, prepared paan mixture, tutti frutti, green food colour, a pinch of baking soda & give it a mix.

Step 6 :

Arrange banana leaves in the baking mould so that base and sides are covered. Brush ghee onto the leaves.

Step 7 :

Transfer the prepared cheese batter into the mould.

Step 8 :

Bake in a pre-heated oven/convection at 180 degrees for 30 minutes and after that at 200 degrees for another 30 minutes. Check for doneness.

Step 9 :

Let the Chhena Poda cool completely before unmoulding.

Step 10 :

Decorate with a paan, cherry, tutti frutti, silver balls, white chocolate & candied fennel.
