Prawn with broccoli & mushroom risotto with Parmesan

Step 1 :

Marinade the cleaned prawns with salt and lemon juice for 10 mins.

Step 2 :

Heat one tbsp extra virgin olive oil and sauté the marinated prawns in it for 1-2 mins. Remove from heat and keep aside.

Step 3 :

In a small pan, over high heat, bring the vegetable stock to boil. Add the broccoli and boil till it becomes tender. Transfer the broccoli to a small bowl and keep the stock aside.

Step 4 :

In a heavy and large pan, over low heat, put 4 tbsp extra virgin olive oil, add chilli flakes and crushed garlic, stir frequently until it is golden brown.

Step 5 :

Add the onions and sauté for a while. Now add the rice and 3/4th of the vegetable stock. Adjust the heat to simmer. Stir until the stock is absorbed and the rice is softened.

Step 6 :

Add the mushrooms, prawns, tomatoes and the rest of the stock. Stir constantly. Then add the broccoli, salt, pepper, grated parmesan cheese, and parsley. Mix well and serve hot.
