Step 1 :
Hang the curd in a piece of cloth to remove excess water.
Step 2 :
To prepare the sauce, add olive oil in a pan and add the minced garlic. Fry for 1 min. Add in crushed tomatoes, red pepper flakes, and salt. Let it simmer on low heat for about 20 minutes until water evaporates. Now add the basil and stir for 30 seconds. Remove from heat.
Step 3 :
In another bowl combine the mozzarella, the drained curd, and pepper powder. Mixture should be thick.
Step 4 :
Slice the eggplant lengthwise and brown them on both sides in a skillet with little oil.
Step 5 :
Remove the eggplant slices in a tray. Add a scoop of the cheese mixture in between each and roll them.
Step 6 :
Preheat oven to 125 degrees. In a baking tray, spread a layer of the prepared sauce. On top of the layer, place the rolled eggplant slices in a row.
Step 7 :
Top with the shredded parmesan cheese and bake for 20 min.
