For Nolen Gur Sandesh, take milk in a heavy bottomed saucepan and place it on high flame.
Once the milk starts boiling, add lemon juice to it and reduce the flam to medium.
Now with the help of a spoon stir milk and lemon juice continuously.
Once the milk starts curdling turn off the flame.
Strain the curdled solids in a muslin or fine thin cotton cloth. Once the sour water is strained, wash the solids with normal water 2-3 times. This removes every drop of sour water. Hang it to completely draining for 7-10 minutes. The curdled solids is the cottage cheese or chenna which will be used for our dessert.
