Ingredients

Step 1 :

Wash the mutton and allow the water to drain off completely.

Step 2 :

Grind all dry spices into fine powder.

Step 3 :

In a large mixing bowl, add the mutton, prepared spice powder, papaya paste, ginger paste, garlic paste, curd, ghee, salt, kewra water, rose water, turmeric powder, birista (fried onions) and soaked saffron.

Step 4 :

Mix well and marinate in a refrigerator for at least 3 hours.

Step 5 :

Take out of the refrigerator 15 minutes before starting the cooking process.

Step 6 :

Heat a hot bottom utensil.

Step 7 :

Add 2 tbsp. ghee and heat on high flame.

Step 8 :

Add the marinated mutton in small portions and keep stirring in between.

Step 9 :

Stir and cook on high flame for about 5 minutes.

Step 10 :

Cover with a lid and let it cook on very low flame for 1 and a half hour, while stirring every 15 minutes.

Step 11 :

Once the mutton is tender, put it off the flame.

Step 12 :

Before serving put it on a low flame and serve hot with roti/plain roti/ rice/naan.
