Step 1 :
Boil the potatoes. Cool down, peel them, and mash them finely. Mix 4 tbsp cornflour and spices. Add finely chopped dhania leaves also if desired. Mix the cornflour and spices well .
Step 2 :
Hard boil 6 eggs .Cool them by dipping in cold water. Peel and keep aside.
Step 3 :
Take one flat plate. Break vermicelli into small pieces with your finger tips.
Step 4 :
Take sufficient amount of potato mixture on your palm. Keep one hardboiled egg in the centre and wrap it nicely so as to cover the whole egg with potato mixture.
Step 5 :
Immediately roll this potato and egg ball on the vermicelli bed and cover it by pressing well between your palms. Keep aside. Likewise prepare all the balls.
Step 6 :
Deep fry in medium to hot oil. Let it cool slightly. Cut the Egg ball in two pieces from the centre with a sharp knife.
Step 7 :
You can fry some noodles and arrange like a nest. Place the egg balls in the middle of the noodle basket. Decorate with coriander leaves. Serve hot with tomato sauce.
