Rice Pancake with Khoya Coconut Filling

A traditional Bengali recipe modified with time.

Cooking Steps

Step 1 :

Drain and dry the soaked rice and grind it to make fine rice flour.

Step 2 :

Take 1 and 1/2 cup rice flour from it and add flour, semolina, 2 tbsp sugar, and 1 and 1/2 cup of milk and prepare a semi thick batter, add some water if required.

Step 3 : For the filling

Heat 1 tbsp of ghee in a pan, add grated coconut and 1 cup sugar, stir on slow flame for 5-6 minutes.

Step 4 :

Then, add grated khoya, 1/2 cup milk and cashew powder to the coconut mixture, cook for a while till the milk dries up and keep aside.

Step 5 :

In a frying pan, heat 1/4 tsp ghee and add a ladle full of batter and swirl the pan around to coat it evenly, place a little coconut filling at one end and roll over to the other end.

Step 6 :

Remove from fire and serve with nolen gur. Repeat the process to make pancakes till all the batter has been used up.
