This recipe is a beautiful combination of rice and dry fruits with powdered whole spices. Rosewater and saffron lend a heavenly aroma to this exotic dish.

Step 1 :

Soak the pulao rice in water for 30 minutes.

Step 2 :

Meanwhile, blend saffron, cloves, cardamom (with the skin) and cinnamon into a fine powder.

Step 3 :

After 30 minutes, add ghee to a skillet, and fry the almonds for 2 minutes.

Step 4 :

Next, add the dates and raisins followed by the rice, the prepared spice powder, rosewater and salt. Mix and cook this for 1 or 2 minutes.

Step 5 :

Add 2 cups of water and let the rice start boiling on a medium flame.

Step 6 :

Let it boil for 2-3 minutes, and then cover the skillet with a lid. The pulao should be cooked, covered and undisturbed for 15 minutes.

Step 7 :

Serve it hot and enjoy the aroma.
