Step 1 :
Steam the vegetables in a colander or steamer till just cooked for about 2 minutes. It can be done in batches.
Step 2 :
Throw into a big bowl of chilled water, remove and pat dry.
Step 3 :
Blend corn flour with water in a medium sized bowl until dissolved.
Step 4 :
Add soy sauce, egg and sesame oil and mix well. Then add the veggies.
Step 5 :
Heat oil in a hot wok or kadhai until the surface seems to shimmer slightly.
Step 6 :
Deep-fry half the veggies over high heat for 1 minute. Remove using a slotted spoon and drain on kitchen paper. Repeat the process with the remaining veggies and set aside.
Step 7 :
Carefully drain hot oil from the wok and wipe clean with kitchen paper.
Step 8 :
Heat the same wok to moderately hot, add the hunan chilli sauce with a splash of water and simmer for 1½ minutes.
Step 9 :
Add the veggies and stir fry for a further 30 seconds. If you feel the sauce is sticking, add a splash more of water and stir through before serving.
Step 10 :
Arrange crispy veggies on a platter and serve immediately.
