Sweet sour spicy coconut pickle is a unique recipe which is super delicious, and will be loved by all. Pair it with anything or have it just as it is.

Step 1 :

Cut the coconut into small thin pieces.

Step 2 :

In a big pan, add mustard oil. Heat till the oil gets moderately hot.

Step 3 :

Add chopped coconut pieces into the hot oil. Cook a while.

Step 4 :

Add salt, roasted masalas, whole chilli and chilli powder into the coconut, and mix.

Step 5 :

Add melted jaggery and tamarind paste. Cook until all the water of the coconut, jaggery and tamarind evaporates, and oil comes up.

Step 6 :

Check the sweet, sour, spice, and salt balance before turning off the flame. Adjust if necessary.

Step 7 :

Store in an air-tight jar after being cooled off thoroughly. Refrigerate for longer shelf life.
