Step 1 :
Soak the white chickpeas over night.
Step 2 :
Wash it and boil in pressure cooker until semi soft.
Step 3 :
Boil potato and eggs.
Step 4 :
Chop boiled potato, eggs, onion, chilies, & coriander leaves.
Step 5 :
Mix boiled potato, eggs, onion, chilli, coriander leaves, and all the masala powder, including salt. Turn on the gas and heat until the mixture bubbles up.
Step 6 :
Check the seasoning. Turn off the heat.
Step 7 :
Add salt and sugar to the tamarind paste. Add water to dilute it. Heat till the mixture reduces a bit.
Step 8 :
Blend the dahi/curd in a mixer using salt and sugar, and masalas.
Step 9 :
Serve the Chotpoti hot, garnishing with chopped coriander leaves. Pair it with panipuris to add some crispiness to it. Stuff the panipuris with the chotpoti, tamarind chutney, and dahi mixture.
Step 10 :
Another way to eat it is by roughly crushing the panipuris on top of the chotpoti, pour dahi mixture and tamarind chutney on top, and enjoy.
