Layered Mozzarella Sheets with Fried Cheese Topping

If you are a cheese lover who doesn't mind going overboard on cheese, this is the perfect dish to dig into. With cheese as the primary ingredient, this lasagna-inspired recipe also includes two layers of veggies and can be served as a stand alone dish for lunch or dinner.

Step 1 : To make the peas filling

Add 1 tsp olive oil and butter to a pan. Add in 1 chopped onion, 1 tbsp minced garlic and fry till the onions turn pink.

Step 2 :

Add the peas next along with chilli flakes, salt and pepper. Keep cooking till the peas soften.

Step 3 :

Remove from heat, let the mixture cool and crush the peas to give them a mushy texture.

Step 4 :

Lastly, sprinkle 1 tsp grated cheese over the mixture.

Step 5 : To prepare the cream cheese filling

Mix 1/2 cup cream cheese, 1/4 cup soften butter, garlic powder, pizza seasoning, salt and pepper in a bowl.

Step 6 : For the carrot tofu filling

Stir-fry the carrots, 1 onion and 1 tbsp minced garlic in a little bit of olive oil, until caramelized. Add a few tablespoons of water.

Step 7 :

Put in the mashed tofu next and season with salt, pepper, cilantro and a squeeze of lemon juice. Simmer for 10 minutes.

Step 8 : To make the mozzarella sheets

In a pan, preferably non-stick, add milk and bring it to a boil.

Then, add the fine semolina and salt, stirring constantly with a spatula until it is well mixed and slightly thickened.

Step 10 :

This will take around 2-3 minutes. Reduce the heat and add the grated mozzarella cheese.

Step 11 :

Keep stirring fast and mix well over low to medium heat until the cheese has melted and the mixture forms a soft dough.

Step 12 :

Allow to cool until the mixture is warm enough to handle.

Roll the dough till 3 mm thickness on a greased cling film or a silicon rolling sheet. Before rolling, the top of the dough must also be smeared with a bit of oil.

Step 14 :

Cut out rectangles or squares of desired size with the help of a pizza cutter. For this recipe, four mozzarella sheets are required.

Step 15 :

Before you start layering, prepare the fried cheese cubes and cheesy tomato sauce, and keep them ready.

Step 16 :

Cut the two cheese cubes into smaller ones. Add Pizza seasoning, salt and cornflour to breadcrumbs and mix them together.

Step 17 :

Coat the cheese cubes with this mixture and deep fry them. It takes hardly a few seconds for the cubes to turn brown, so be sure not to burn them.

Step 18 :

For the sauce, take two tbsp of the cream cheese filling, and mix well with one grated and melted cheese cube and a tablespoon of hot and sweet tomato sauce.

Step 19 :

Cover it with the second sheet. Spread the cream cheese filling to make the second layer.

Step 20 :

Place the third sheet on the cream cheese filling and spread the carrot tofu filling all over it.

Step 21 :

The final layer of mozzarella sheet over the tofu filling should be topped with the cheesy tomato sauce and a few fried cheese cubes, crushed and lined in the middle.

Step 22 :

Use the rest of the fried cheese cubes for garnishing the way you want.

Step 23 :

Sprinkle some cilantro leaves on the crushed cheese cubes to give the final touch.
