This easy to make pie is crispy, buttery and sweet with coconut as the main ingredient. It's amazingly tasty and just the right kind of dessert to serve to guests.

Step 1 :
Add 2 and 1/2 cups of flour, 1 cup cold butter, 1 tsp salt and 1 tsp sugar to a large bowl.
Step 2 :
Add in 1 tbsp of ice cold water at a time and prepare a dough. You may require 1/2 cup of cold water for this process.
Step 3 :
Sprinkle the dough with a little flour, wrap in cling film and refrigerate for an hour.
Step 4 :
Meanwhile, prepare the filling. In a large bowl, combine milk, 1 cup of sugar, coconut, eggs, 3 tbsp flour and 1 tbsp of butter.
Step 5 :
After an hour, remove the dough from the fridge and wait for a few minutes for the dough to soften.
Step 6 :
Roll out with a rolling pin on a lightly floured surface to a 12-inch circle; about 1/8 of an inch thick.
Step 7 :
Carefully, place it into a 9-inch pie plate. Gently press the pie dough down so that it lines the bottom and sides of the pie plate.
Step 8 :
Pour the prepared filling into pie shell.
Step 9 :
Preheat oven at 180° C. Bake the pie for 60-75 minutes depending upon the heating capacity of your oven.
Step 10 :
Cool at room temperature before serving. For topping, toast 2 tbsp of desiccated coconut and spread it over the top.
