These delightful strawberry barfis will fill you with joy. The lovely pink tone adds freshness to the dessert. It is a cute looking yet yummy dessert that is a must for Holi.

Step 1 :
Wash the strawberries, cut off the tops and put it in a blender.
Step 2 :
Add milk and fresh cream to the strawberries and blend it until smooth.
Step 3 :
Pour the mixture to a kadai and add milk powder, coconut powder, sugar and a pinch of salt. Give it a good stir.
Step 4 :
Soak agar agar powder in some water for a few minutes.
Step 5 :
While the mixture is hot, add the agar agar solution into it and mix until it starts to boil. Turn off the heat immediately.
Step 6 :
Pour the mixture into a square or rectangular mould, and refrigerate it for it to set quickly. If you put it in the freezer, it will set faster.
Step 7 :
If refrigerated, check after 3 hours and if kept in the freezer check after 20 minutes. If the dish is set, demould it carefully.
Step 8 :
Cut the sweet according to desired shape and size.
Step 9 :
Before serving, garnish each barfi with cashew nuts over the top and dust the sides with coconut powder.
