Sarso ka Saag and Makai ki Roti is a very delicious combination originally from Punjab.

Step 1 :

Carefully wash the sarso ka saag and spinach leaves. Remove the stalk and separate the leaves from it.

Step 2 :

Boil both sarso ka saag and spinach leaves together in hot water for few minutes.

Step 3 :

Heat 2 tbsp mustard oil in a pan. Add chopped onion, garlic, ginger paste, green chilli & tomato. Saute it for few minutes.

Step 4 :

Coarsely grind both the saag and then add it to the onion mixture.

Step 5 :

Add salt and all the spices. After few seconds, add 2 to 3 tbsp maize flour and mix it well. Cook it for few minutes and then switch off the flame.

Step 6 :

For the tadka, heat 1 tbsp oil or ghee and then add 4 green chilli, dry red chilli and 5 to 6 garlic.

Step 7 :

Roast it well and add it to the saag mixture. Add 1 tbsp ghee or butter over it. Sarso Ka saag is ready.

Step 8 : For Makai ki roti

Take maize flour, salt and required water in a mixing bowl and knead it well until smooth.

Step 9 :

Cover it and let it rest for 10 minutes.

Step 10 :

Now take a small portion from dough. Roll it with the help of a rolling pin.

Step 11 :

Heat a tawa, place the roti on it. Roast it till the surface of the roti turns dark. Flip it then and roast the other side. Then for few seconds roast the roti on direct flame.

Step 12 :

Just before serving, apply ghee on roti & enjoy it with delicious sarso ka saag.
