Thai Vegetable Soup with Thai Toast

Thai spiced vegetable soup is warm and delicious. It is served with Thai toast with a twist.

Step 1 : To make Thai green paste

In a mixer, add green chillies, garlic, 1/2 cup chopped onions, ginger, 1/4 cup coriander leaves, grated lemon zest, lemon juice, coriander powder, cumin powder, 1/4 cup lemon grass stalks, salt and freshly ground black pepper.

Step 2 :

Now, add 1/4 cup of water to the jar and blend until smooth.

Step 3 : To make Thai Toast

Heat a pan, add 1 tsp olive oil then add Thai green paste and water and saute well.

Step 4 :

Add grated cottage cheese, soya sauce, crushed peanuts, salt to taste and freshly ground black pepper, mix well. Add little sugar and mix again.

Step 5 :

Take out the mixture in a bowl and set it aside to cool. Cut the brown edges of the bread slices. Next, cut each slice into four equal pieces. Place it in a baking tray, brush with olive oil.

Step 6 :

Top the slices with Thai flavored cottage cheese mixture. Apply some olive oil, sprinkle white sesame seeds over it.

Step 7 :

Now, place the tray in the oven and toast the slices at 180° C for 5-7 minutes.

Place the Thai toast in a plate and garnish with roasted peanuts.

Step 9 : To make Thai Soup

Heat oil in a saucepan over medium-high heat.

Step 10 :

Add chopped onion, cabbage, mushroom, carrot and red bell pepper and saute it for 3-5 minutes. Add ginger and Thai curry paste and saute it for 30 seconds.

Step 11 :

Add tomatoes, coconut milk, lemongrass stalk, tomato puree and sugar.

Step 12 :

Bring it to a boil, cover it with a lid and simmer for 20 minutes until the vegetables are soft.

Step 13 :

Remove the lemongrass stalk, add coriander and allow it to cool down.

Step 14 :

Transfer the soup to a blender or food processor and puree until smooth.

Step 15 :

Return the soup to the pan, add about 200 ml of water to thin the soup down, and reheat to serve.

Step 16 :

Decorate each bowl of soup with some roasted peanuts and coriander leaves. Serve the soup with the prepared Thai toast.
