This is a perfect Thai veg curry recipe. This dish can be serve with hot rice or roti.

Step 1 :

In a blender, add cumin seeds, coriander seeds, coriander leaves, garlic, ginger, lemon grass stalk, basil leaves, green chilli, cloves, onion and little water to make a smooth paste.

Step 2 :

Chop broccoli florets, carrot, yellow capsicum, red capsicum, green capsicum and baby corn.

Step 3 :

Heat 1 tbsp oil in a pan and stir fry the vegetables for few minutes. Then, take it out from pan.

Step 4 :

Heat 1 tbsp oil again and add the prepared green paste to it. Saute it for a few minutes and then add the stir fried vegetables to it.

Step 5 :

Add coconut milk and salt. Add brown sugar for little sweetness.

Step 6 :

Cook it for 2 to 3 minutes more. Add kaafir lime leaves, lemon juice and switch off the flame. The mouthwatering Thai green curry is ready to serve.
