This soup is made with different types of mushrooms.

Step 1 :

Cut tomatoes, onion, coriander, lemon grass, Thai ginger, kaffir lime leaves and keep it aside.

Step 2 :

Heat coconut milk on medium flame for 2 minutes.

Step 3 :

Add kaffir lime leaves, lemon grass and after a minute, add onions and Thai ginger.

Step 4 :

Let it simmer for 2 minutes and then add tamarind (ready if available or tamarind paste).

Step 5 :

Add tomatoes and simmer for 2 minutes. Now, light soy sauce, jaggery, salt and mix. Allow it to cook for 2 minutes.

Step 6 :

Add the mushrooms and mix well.

Step 7 :

Separately roast dry red chillies for 2-3 minutes. Crush and add it in the soup.

Step 8 :

Simmer and mix for 3-4 minutes. Add coriander and lemon to the soup and mix well. Serve hot.
