This is a unique yet healthy, rich in nutrients beetroot soup.

Step 1 : To make the spice paste

In a grinder, add lemon grass stalks, garlic cloves, red chillies, galangal and Kaffir lime leaves. Grind it to make a smooth paste.

Step 2 :

Heat oil in a sauce pan, add chopped onion, salt and cumin seeds and saute it till the onion soften.

Step 3 :

Add the prepared spice paste and cook for about 5 minutes to release the fragrance.

Step 4 :

Add chopped beetroot, coconut milk, black pepper and cook for 2 minutes then simmer it for 7-8 minutes.

Step 5 :

Serve this spiced beetroot soup in a bowl, garnished with a few beetroot pieces.
