Penang Fish Curry

This is one of the easiest Thai curries that is delicious and flavourful.

Step 1 :

Heat oil in a frying pan and saute the sliced onions and take it out in a plate.

Step 2 :

Add the red curry paste and fry it for 2 minutes, add coconut milk, stir until mixed well and bring it to a boil.

Step 3 :

Now, add chopped lemon grass, lime leaves, fish sauce and sugar. Mix it well and lower the heat.

Step 4 :

Add the chopped french beans and let it cook on low heat until tender for about 5 minutes.

Step 5 :

Now, add in the chopped bell peppers and cook for 2 more minutes. At this point, check for salt and add more if needed.

Step 6 :

Let the mixture boil. Add in the fish pieces, gently mix, cover and cook for another 7 minutes. Swirl the pan gently in between.

Step 7 :

The sauce will thicken, at this point if sauce is too thick add a little water, let it boil and switch off the flame.

Step 8 :

Scatter the fried onions and roughly torn basil leaves over it and cover it with the lid for 5 minutes.

Step 9 :

Serve it hot with cooked sticky rice.
