It’s a healthy version of minestrone whipped in a jiffy with loads of fibre rich veggies.

Step 1 :

Heat the oil in a non stick pan, add chopped onions and bay leaves. Saute it on medium flame for 20 seconds.

Step 2 :

Add finely chopped carrots, finely chopped cauliflower, green peas and 5 cups water.

Step 3 :

Mix it well and cook it on a medium flame for 2-3 minutes, while stirring occasionally.

Step 4 :

Add chopped potatoes, chopped cabbage and elbow macaroni. Mix it well.

Step 5 :

Cook it on medium flame for 8-10 minutes till the macaroni and vegetables are tender, while stirring occasionally.

Step 6 :

Add cornflour slurry, chopped tomatoes, tomato puree, oregano, salt and pepper. Stir it well.

Step 7 :

Cook on medium flame for 1-2 minutes, while stirring continuously.

Step 8 :

Serve it hot garnished with parsley.
