Beetroot Spinach Soup

Here is an excellent winter soup recipe that is prepared with beetroot and spinach.

Step 1 :

Wash spinach, finely chop it and set it aside. Wash and chop beetroot into cubes, wash broccoli florets and set aside.

Step 2 :

Add chopped spinach, broccoli florets and beetroot cubes in a pressure cooker along with required water and a little salt.

Step 3 :

Cover the lid and boil it over medium flame for 2-3 whistles or until cooked.

Step 4 :

Once done, allow it to cool and transfer it into a blender and blend it to a smooth paste.

Step 5 :

Add the ground paste into a pan, add a pinch salt, sugar, lemon juice and black pepper powder.

Step 6 :

Boil it for 5 minutes and lastly add boiled corn kernels to it.

Step 7 :

Serve it hot, garnished with black pepper powder.
