It is a healthy cake rich with berries and nuts that makes it sweet in taste and delicious to eat.

Cooking Steps

Step 1 :

Roughly chop berries, nuts and fruits. Soak them in freshly squeezed orange juice with orange zest.

Step 2 :

Preheat the oven at 180°C.

Step 3 :

Use extra virgin olive oil to grease a cake tin of 9x5 inches, use parchment paper to line the bottom of the tin.

Step 4 :

Take a large bowl and sift in flour, baking powder, baking soda, cinnamon and ginger powder. Gently stir it together and keep it aside.

Step 5 :

Take another large bowl, add oil, yogurt and jaggery powder. Whisk the mixture by hand or by hand mixer for a minute.

Step 6 :

Add the soaked fruits and nuts along with the juice to the wet ingredients.

Step 7 :

Gently stir the ingredients, if the batter is thick then add some water.

Step 8 :

Pour into cake tin and bake at 180°C for 35 to 40 minutes or until done.
