Here is an easy to make healthy soup made from pumpkin.

Step 1 :

Wash, peel, deseed and cut the pumpkin into small cubes.

Step 2 :

Slit green chillies and finely chop garlic.

Step 3 :

In a pan, heat butter on medium flame.

Step 4 :

Saute chopped pumpkin, garlic and green chillies in it.

Step 5 :

Add sufficient water and salt to it.

Step 6 :

Pressure cook the pumpkin till it becomes soft and mushy.

Step 7 :

Once it cools down, transfer it to a blender and blend it into a fine puree.

Step 8 :

Now, transfer the prepared puree to a deep bottom pan and bring it to a boil.

Step 9 :

Add milk to it, stir well and bring it to a boil.

Step 10 :

Add pepper powder, lemon juice and garnish it with chopped coriander leaves. Serve it hot.
