Roasted Carrot Tomato Soup is a healthy, simple to prepare yet delicious soup.

Step 1 :

Boil tomatoes in a sauce pan along with water, after 5 minutes turn off the flame.

Step 2 :

Peel off the skin of each tomato and set it aside.

Step 3 :

Heat butter in a pan, add carrot and saute for 5 minutes until tender. Cook on medium flame.

Step 4 :

Turn off the flame. Allow it to cool down to room temperature.

Step 5 :

Once it cools down, make a smooth paste of tomato and carrot in a mixer.

Step 6 :

Now, take a pan and add the tomato carrot paste. Add 3 cups of water and bring it to a boil.

Step 7 :

Once boiled, allow it to simmer on low flame.

Step 8 :

Add salt and black pepper powder and cook it for 5 minutes. Serve it hot.
