Cheesy Savoury Muffin Cups

Healthy and cheesy savoury breakfast muffin cups. Most savoury muffins use flour but this is a healthier gluten free version where cheese is used to bind the vegetables and it is absolutely delicious. These muffin cups make an excellent lunch box snack too.

Step 1 :

To a saucepan add butter and sauté the vegetables. Do not overcook the veggies.

Step 2 :

Season with salt and pepper and mixed Italian herbs.

Step 3 :

Grease or line a muffin tray and add the vegetable mix and top with shredded mozzarella and cheddar cheese.

Step 4 :

In a preheated oven bake at 200° C for 10-15 minutes or until the cheese melts.

Step 5 :

This recipe can also be modified to make spinach and cheese or spinach and tomato savoury muffin cups .
