Aloo Paratha

Aloo Paratha is an all time favourite in most Indian households especially in North and Central India. It can be made very quickly and is relatively easy to prepare. It is served with butter, yogurt, coriander chutney or pickle.

Step 1 :

Knead the flour with little milk and water. Add water in portions while kneading so that the dough is soft. Cover it with a damp muslin cloth.

Step 2 :

Wash the potato and pressure cook for two whistles on medium flame.

Step 3 :

Finley chop onion and green chillies. Once the potato is cooked, peel and mash it.

Step 4 :

Add crushed kasuri methi, ajwain, coriander powder, garam masala, aamchur powder and salt to the mashed potato.

Step 5 :

Add finely chopped onions and green chillies to the mashed potato.

Step 6 :

Take the prepared wheat dough and roll it in a 3-4 inch diameter circle.

Step 7 :

Add a spoonful of the potato filling at the center of the tolled out dough. Seal the dough gently with your fingers.

Step 8 :

Roll the same dough once again with the filling, gently using a rolling pin. Apply pressure evenly and gently on all sides.

Step 9 :

Heat the tawa and cook the parantha on both sides. Once it is cooked halfway, brush it with ghee on both sides.

Step 10 :

Cook it well and serve it piping hot with yogurt or pickle.
