Sindhi Style Onion Paratha

Sindhi style onion paratha is an extremely versatile paratha that is eaten with curd and pickle for breakfast or with vegetable stew for lunch. A lot of people also enjoy it as a snack with their evening tea.

Step 1 :

Making the koki dough by taking wheat flour in a mixing bowl.

Step 2 :

Add chopped onions, chopped coriander, cumin seeds, salt, red chilli powder, and a teaspoon of ghee. Mix it well.

Step 3 :

Add a little water to make a stiff dough. The onions will release water, so the dough should initially be a bit stiff.

Step 4 :

Grease the dough with some ghee, cover with a damp towel, and set aside to rest for about 30 minutes.

Step 5 :

Make slightly large balls of dough (approximately the size of a tomato), dust it with wheat flour and roll it out into a round, thick parathas.

Step 6 :

Using a knife, draw criss-cross diamond patterns on one side. This is done so that the koki cooks through and also helps in the absorption of ghee.

Step 7 :

Place the koki paratha on a warm tawa on medium high heat. Flip it over after a few seconds, and add a tsp of ghee to it.

Step 8 :

Flip it over again, and add 1 tsp of ghee on it as well. Press it down with your spatula and cook evenly on both sides until brown spots appear and it turns crisp.

Step 9 :

You can store it in a casserole until you prepare the rest, it is best consumed immediately.
