Step 1 :

Scrape the skin of bitter gourd using a peeler and slit it at the center, cutting it into halves.

Step 2 :

Place the bitter gourd into a bowl and sprinkle salt and rub it well. Rest it for 30 minutes.

Step 3 :

Prepare the masala by roasting coriander seeds, cumin seeds, fennel seeds and fenugreek seeds. Dry roast until it turns aromatic.

Step 4 :

Allow it to cool down and transfer it into a blender and make fine powder.

Step 5 :

In a kadai, heat 3 tsp oil and a pinch of hing.

Step 6 :

Saute chopped onion until it turns translucent. Add ginger garlic paste, chopped tomatoes and saute it well.

Step 7 :

Add in the scraped skin and seeds of the bitter gourd and saute it well until it is cooked completely.

Step 8 :

Now, add prepared masala to it. Saute until the spices turn aromatic. Add in 2 tbsp water and mix until the stuffing turns moist.

Step 9 :

Clean off the karela completely, and stuff the prepared stuffing into it.

Step 10 :

Tie the karela with a piece of thread to prevent the stuffing from falling out while frying.

Step 11 :

Heat 2 tbsp oil and add a pinch hing. Add in the stuffed karela and roast for 5 minutes.

Step 12 :

Cover and simmer for 20 minutes turning it occasionally. Cook until the karela is cooked entirely without burning it. Serve it hot!
